Vanilla Coconut Protein Pancakes
- 1 scoop WowMoms Vanilla protein Powder
- 1/3 cup rolled oats
- 1/3 cup coconut flour
- 3 tbsp unsweetened shredded coconut
- 1 banana
- 2 whole eggs
- 1/2 cup egg whites
- 4 tsp baking powder
- Pinch ground cinnamon
- 2 tbsp flaxseed meal
- Pinch sea salt
- Topping: Toasted coconut flakes, toasted chocolate coconut flakes, sugar free pancake syrup
- Add all ingredients into a blender and blend until smooth.
- Heat a skillet over medium heat and spray with cooking spray.
- Pour 1/3 of a cup of the batter onto the heated skillet.
- Cook the pancake for 2-3 minutes on each side or until golden.
- Repeat with remaining batter.
- Add toppings and enjoy!.
